A Brief History of the Greek Style Pizza

The Greek style pizza owes its name to Costas Kitsatis, also known as Constantinos Kombouzis or simply “Charlie”, a Greek immigrant who originally moved to the United States from Albania. He went on to launch his pizza restaurant, the Pizza House, in 1955 at 86 Truman St. New London, in Connecticut.

It was during this time that he created his original Greek style pizza. Unlike most pizza chefs at the time, instead of tossing and stretching fresh pizza dough for each new order, he set up a modern system whereby he would prepare a full workday’s worth of pizza crusts in the morning, which would then be cooked in 10-inch pans.

The Greek Style Pizza in Calgary

Pizza restaurants started to gain popularity in Calgary in the 1960s. The Greek style pizza, which had been received very positively in the US, eventually made its way from New England to Canada.

Within the next decade, the Greek style pizza went on to become increasingly popular in cities such as Saskatoon and Regina, before finally working its way to Calgary, where it was originally known as a popular 70’s style pizza. Since then, the Greek style pizza has gone on to become an essential part of Calgary's cuisine. The Preparation Process of Gourmet Greek Pizza

As per its origins, the Greek style pizza is prepped and cooked in shallow metal pans instead of being tossed and stretched to order. Likewise, unlike most other pizza styles, the Greek pizza is not baked in a pizza oven. The crust of Greek pizza resembles focaccia bread, as it is usually light and puffy, with a slight crispiness. The crust is also typically coated in oil during the preparation process.

The most common ingredients used to make Greek pizza include mozzarella, feta cheese, oregano, tomatoes, and Greek olives. The ingredients can vary according to taste and preference though and Greek pizzas are therefore commonly available in both veg and non-veg options.

While the toppings themselves vary from one pizza restaurant to another, one thing that all Greek pizzas have in common is their signature thin sauce. Make with a liberal amount of olive oil, the sauce is usually kept on the stovetop where it is kept warm and periodically stirred. This not only gives the sauce its characteristic thinner texture, but it also adds a touch of caramelization to it.
